Pinterest Deliciousness!

As of this minute, I have 164 pins on my Pinterest Food board.  I've been slowly trying the recipes out, and the ones I've tried so far have definitely been keepers.  I made these two for supper tonight.  In retrospect, the two together may have been a bit of a flavor overload.

Crack Potatoes
 This easy (my #1 requirement for recipes!) cheesy hash brown dish came together quickly and is SO tasty.  There's a possibility that I went back for thirds on it.  Maybe.  The recipe can be found here at the Plain Chicken blog.


Honey Sauced Chicken
The Honey Sauced Chicken was delicious and the chicken came out super tender.  Next time, I might use a little less soy sauce, but that's just a personal preference.  I doubled the recipe so I could freeze half for another meal.  The recipe can be found here at the Mmm...Cafe blog.

Easy Italian Chicken and Potatoes

This is one of my favorite meals and the first one I turn to when I have company.  Hubby is not a big fan of chicken (to be more specific, he rolls his eyes every time I make it), but even he likes this dish.

Easy Italian Chicken and Potatoes:


4-6 chicken breasts
1 bottle Italian salad dressing
1/2 cup parmesan cheese
4-6 red potatoes, cut into slices

Place chicken in a greased 9" x 13" pan.  Add the potatoes and pour the Italian dressing over the top of everything.  Sprinkle with parmesan cheese and bake, covered, at 350 degrees until chicken juices run clear and potatoes are soft.


So easy and the chicken always comes out moist and full of flavor.  This is a good dish to throw in the crockpot as well.  I always make tons of extras of this dish because the leftovers are even better the next day!

24 Weeks

How Far along: 24 weeks

Milestones: Baby's lungs and taste buds are continuing to develop.

Baby's Size:  Baby weighs just over a pound and is approximately 12 inches long from head to toes.  About the size of an ear of corn!

Sleep: Going well.  I'm not so big that I'm uncomfortable yet and I don't have to get up to use the bathroom every night anymore.

Best Moment This Week: Getting the new pantry cupboard putting together and FINALLY getting my kitchen counter cleaned off!

Miss Anything?: Being able to easily put on my socks.

Movement?: I'm pretty sure this baby is doing the splits.

Food Cravings:  An omelet from Perkins, Pizza Hut breadsticks, and mini donuts!

Things That Make Me Queasy: Just normal stuff right now.

Gender: Boy!

Labor Signs: Having some Braxton-Hicks contractions, mostly when I'm really active.  Nothing painful at all, just tightening in the abdomen.

Symptoms: Nothing out of the ordinary...heartburn (although nowhere near as severe as I had with Little Man which leads me to believe I'm having another baldy, lol), hip pain, fatigue, etc.

Inny or Outy: Flat!

Mood Most Of The Time: Don't know if I want to touch this one!  Lol.  Let's just say that things have been shaky.

Looking Forward To: Working on re-organizing my fabric and patterns so things *hopefully* fit better.

You Know You're A Mom When...

My best friend compiled this list and I loved it so much that I asked her if I could share it here.  Being such a sweetheart, she said yes :)  She's also expecting her third baby about a month before I'm due to have mine. 


-You're too exhausted to give baths and decide that a wipe down with a damp rag will work and buy you another day.

- You don't even look when your kid coughs because you recognize the cough and know it isn't a dangerous one.

- You strive for simplicity and realize that it is only a dream.

- You consider anyone getting in and out of a car without having to grab the diaper bag, take out a kid (or two) and worrying about a stroller living such a luxurious life!

- You look in your pocket and find a pacifier.

- You get through a day by eating sugar and praying.

-You get in fights with your hubby over really silly things and then stop and think that what you're really fighting for is control in a world where you feel very out of control.

- T.V is your adult contact for the day.

- You know the ebbs and flows of the day so well, you know when you're entering an easy time or a hard time.

-You finally get time away from the munchkins and you find yourself getting irritated at yourself because you miss them so dang much!!

Cheesy Taco Shells

I've made these before, but tonight I decided to change the recipe up a bit.  They turned out sooooo yummy!


Cheesy Taco Shells

2 pounds ground beef
2 envelopes taco seasoning
1 8-oz package of cream cheese, softened
24 uncooked jumbo pasta shells
1 can enchilada sauce
1 can tomato sauce
2 cups shredded cheddar or Monterey Jack cheese
1 cup sour cream

Cook beef until no longer pink and drain.  Stir in taco seasoning.  Add cream cheese and simmer for 5 minutes or until completely melted.  Cook pasta according to box directions and drain.

Stir enchilada sauce and tomato sauce together in a separate bowl (you can add salsa if you'd like.  Personally, I don't like salsa :)  Pour 1/2 of sauce mixture into a greased 9" x 13" pan.  Fill each shell with meat mixture and place in dish.  Top with remaining sauce and cheese.  Bake at 350 degrees for 30 minutes or until cheese is melted and bubbling.  Serve with sour cream.


When I make this, I usually have enough extra noodles and meat mixture that I can also fill a 9" x 9" pan which I then freeze for another meal.

Are We Done Yet?

This past month has been...well, overkill on the medical front.  It started with my regular prenatal appointment.  A few days later, I took Little Man in for a high fever.  Then, a few days after that, I had my 6 month checkup with my asthma and allergy specialist.  I thought 3 times in a week was a lot.  Little did I know that we were just getting started.

The week after that, I had my ultrasound (yay!) followed shortly thereafter by a 6 month checkup with Princess's asthma and allergy specialist.  Another week and Little Man had his 2 year well-child checkup.  Our general practitioner found a heart murmur and decided to refer him to a pediatrician who had more experience with heart murmurs.  The pediatrician did an EKG and x-ray (which Little Man was NOT happy about especially since I wasn't allowed in the room with him) and referred Little Man to a pediatric cardiologist.  Although the heart murmur was a little different than what most kids with heart murmurs have and usually grow out of, the cardiologist determined that it was nothing to be concerned about and that he too, will outgrow it in due time.

Between the three checkups for Little Man and his sweet little heart, I had another prenatal appointment and a middle-of-the-night 911 call for a severe asthma attack.

Let's review:
In the past 31 days, the three of us (thankfully, Hubby has done his part and stayed healthy) have tallyed up nine doctor visits and one 911 call.  Yup.  I think we're ready to be done for a while.

While visiting the "big city" for all these doctor visits, I did manage to squeeze in some shopping.  And by squeeze, I mean all-day shopping trips.

Here's a cute onesie I found for Little Man.  Being a musical family, I pretty much swoon over any children's clothing that is music-related.

22 Weeks


I skipped my weekly pregnancy post.  I filled it out, but realized that most of my answers were the same as last week and thought to myself, "Well, that's boring."  But the exciting news is that I'm FIVE months pregnant!  Doesn't seem like it could be true, especially since the pregnancy didn't even sink in until I had my ultrasound.  My other two pregnancies were surprises too, but this one really blew me away.  I think it had something to do with thinking I wouldn't be having any more babies after Little Man.

Baby Stuff

Since this is my third baby, I don't technically need anything, but I do have a wish list anyways.  :)  Actually, I do need a new diaper pail.  After two kids, my Diaper Genie (the original version that's a pain in the tushy to use) smells terrible.  I've bleached that thing and lysoled it and everything else I can think of and it's time to send it on a trip to the dumpster.

21 Weeks

How Far along: 21 weeks

Does anyone want to come help me wash towels?

Milestones: Baby's digestive system is developing.

Baby's Size:  Baby weighs about 12 ounces and is approximately 10 1/2 inches long from head to toes.  About the size of a banana!

Sleep: Going well.  I'm not so big that I'm uncomfortable yet and I don't have to get up to use the bathroom every night anymore.

Best Moment This Week: Celebrating Little Man's 2nd birthday.  Hard to believe he's TWO already!

Miss Anything?: Being able to easily put on my socks.

Movement?:  Quite a bit!  Baby Boy is pretty active :)

Food Cravings:  Scrambled eggs with cheese. 

Things That Make Me Queasy: Just normal stuff right now.

Gender: Boy!

Mood Most Of The Time: That depends on the second, haha.  One second I'm on top of the world, and the next second, I feel like everything is falling apart.

Looking Forward To: Continuing to reorganize the house so *hopefully* we can squeeze one more child in.  I'm hoping to find a bookcase for toys and a tall cabinet for Hubby's lunchpail snacks (which we buy in bulk and then store on the kitchen counter) to streamline things a little.
